Zucchini Stove-top Casserole
Ingredients:
Directions:
1. Boil enough water in a pot to cover tomato.
2. Put tomato(s) in boiling water for a few minutes
3. Let cool and slide skin from the tomato
4. Put zucchini slices and onion slices in a fry pan and sprinkle with salt and pepper to taste
5. Put lid on and simmer on low until water begins to steam from zucchini
6. Cook until tender, then remove lid and drizzle with honey and slices of fresh tomato and cover on low for 2 minutes
7. Add grated cheese and let melt. Serve and enjoy!
- 2-3 sliced zucchini
- 1 small sliced onion
- 1-2 peeled fresh tomatoes
- salt and pepper to taste
