Sauteed Sweet Potato Leaves

Ingredients:
  • Sweet potato leaves (individual leaves removed from the vine; enough to fill a large mixing bowl)
  • 1 tomato, chopped (medium sized)'
  • 2 cloves fresh garlic, minced
  • Olive oil
  • salt and pepper

Directions:
Heat a sauté pan on medium heat. Lightly coat the bottom of the pan with olive oil. Place garlic on the pan. After 1-2 minutes, add all of the sweet potato leaves to the pan. Stir until leaves have shrunk to half their size. Add tomatoes, salt and pepper to taste. Reduce to medium low heat. Cover pan and allow to simmer 10 minutes or until leaves are tender, stirring frequently. When leaves are tender, remove from heat an serve.
