Cucumber Tomato salad with couscous

Ingredients:
  • 2 cups of Israeli couscous, cooked and cooled
  • 1 1/2 cups of cucumbers, diced
  • 1 1/2 cups of cherry tomatoes, halved or cubed
  • 3/4 cup of fresh mozzarella, cubes
  • 1/2 cup of your favorite vinaigrette
  • 3 Tbsp. of balsamic vinegar
  • 1 tsp fresh mint (chopped)
  • 1 tsp fresh mint (chopped)
  • 1 tsp dill (chopped)
  • 1 tsp of garlic powder
  • Dash of sugar
  • Salt and pepper to taste

Directions:
Combine all ingredients in a bowl and gently combine until mixed. Enjoy!
